Yuzu, or yuja in Korean, is a fragrant citrus with rough peel, tart flesh and a flavor often compared with lemon and mandarin.
The tree and fruit
The tree has glossy green leaves, white flowers and thorns. Its rounded fruit has a thick, uneven peel. Unlike a sweet mandarin eaten fresh, yuzu is valued in drinks and dishes for its aromatic, sour character.
Cultivation and tradition
Yuzu is associated with East Asian cultivation, particularly Korea and Japan. In southern Korea, the fruit has a long culinary presence and appears in traditional yujacha as well as desserts and other dishes.
Enjoying yujacha
Yujacha is made from preserved citrus diluted with water. It can be enjoyed warm or chilled throughout the year. Peel and fruit provide an aroma that makes this citrus easy to recognize.
